enchilada soup

yesterday i made this yummy enchilada soup.

it is one of hubby's favorites. my mom also loves it.

i am glad they love it because it is not a big hit with my boys.

i guess it is more of an adult soup.

it is a concoction of mine after trying to recreate Chili's enchilada soup.

to be frank mine tastes better :)

it is a thick, creamy soup made with chiles 

tortillas, chicken broth, shredded chicken breast

topped with roasted poblano peppers, cilantro, chopped tomato, and cheddar cheese.

 eat it with tortilla chips for dipping, mmm super yummy!

soup is one of my favorite meals to cook.

i crave soup...even when the temperature is in the 90's like it was today and yesterday.

soup just makes you feel good.

it is one of my go-to comfort foods.

i'll have to work on the recipe to share next time i make it, 

i was kinda in a hurry and didn't write down all the measurements.
